Abstract

Banana slice (sale) is a type of food made from bananas preserved by drying. The purpose of this reserch was to determine the concentration of sodium metabisulphite and drying methods appropriate to maintain the quality of bananas sale. The experimental design of this reserch is a completely randomized design (CRD) with factorial experiment consisting of two factors: the method of drying (P1 = drying, P2 = solar drying) and the concentration of sodium metabisulphite (K1 = 1000 ppm, K2 = 1500 ppm , K3 = 2000 ppm) to obtain 6 treatment combinations, namely: P1K1, P1K2, P1K3, P2K1, P2K2, P2K3. Each combination is repeated three times to obtain 18 units experiment. Parameters studied were the chemical properties (water content, vitamin C and sugar reduction), organoleptic (taste, color, aroma and texture) and physical color (colorimeter). Adding metabisulfite concentration (P) and the method of drying (K) gives a significantly different influence on water content, vitamin C, reducing sugar content, color and physical hedonic flavor, color and aroma of banana slice (sale). But for texture hedonic no significant effect.sun drying method of drying showed better results than the solar drying and more of the addition metabisulfite will improve the quality of banana slice (sale). The best treatment is P1K3 (drying to 2000 ppm metabisulfite). Which has a low water content (19:01%), the highest vitamin C (5:40 mg / 100g), the highest reduction sugar (2:57%), hedonic color (3.90) and highest brightness (86.22 ° Hue) Keywords : banana slice (sale), sun drying, solar dryer, sodium metabisulfite. ABSTRAK Sale pisang merupakan salah satu jenis makanan yang terbuat dari pisang yang diawetkan dengan cara pengeringan. Tujuan dilakukannya penelitian ini adalah untuk mengetahui konsentrasi Natrium Metabisulfit dan metode pengeringan yang tepat untuk mempertahankan mutu sale pisang. Rancangan percobaan yang digunakan dalam penenlitian ini adalah Rancangan Acak Lengkap (RAL) dengan percobaan faktorial yang terdiri dari dua faktor yaitu : metode pengeringan (P1 = penjemuran, P2 = solar drying) dan Konsentrasi Natrium Metabisulfit (K1 = 1000 ppm, K2 = 1500 ppm, K3 = 2000 ppm) sehingga diperoleh 6 kombinasi perlakuan, yaitu: P1K1, P1K2, P1K3, P2K1, P2K2, P2K3. Masing-masing kombinasi diulang sebanyak 3 kali sehingga diperoleh 18 unit percobaan. Parameter yang diteliti adalah sifat kimia (kadar air, vitamin C dan kadar gula reduksi), organoleptik (rasa, warna, aroma dan tekstur) dan warna (colorimeter). Konsentrasi penambahan metabisulfit (P) dan metode pengeringan (K) memberikan pengaruh berbeda nyata terhadap kadar air, vitamin C, kadar gula reduksi, fisik warna dan hedonik rasa, warna serta aroma sale pisang. Akan tetapi untuk hedonik tekstur tidak memberikan pengaruh nyata. Metode pengeringan sun drying menunjukan hasil yang lebih baik daripada solar drying serta semakin banyak penambahan metabisulfit akan meningkatkan mutu sale pisang. Perlakuan terbaik adalah P1K3 (penjemuran dengan 2000 ppm metabisulfit) dengan kadar air terendah (19,01%), vitamin C terbanyak (5,40 mg/100g), kadar gula reduksi tertinggi (2,57%), hedonik warna (3,90) dan kecerahan tertinggi (86,22 °Hue) Kata kunci: sale pisang, penjemuran, solar dryer, natrium metabisulfit.

Abstract

The objective of research is to understand the influence of blanchingtemperature and duration of blanching on levelof some components of the purple sweat potato flour quality. The research had ben performed using factorial completely randomized design (CRD) with two factors. The first factor is the blanching temperature (70oC, 80oC and 90oC) and the second factor is a duration blanching (3 minutes, 6 minutes and 9 minutes) both treatments with 3 replications. Data are analyzed with ANOVA. If there is a difference followed by HSD 5% confidence interval. The chemical properties analyzed were starch content, fiber content, water content, ash content and organoleptic properties and scoring include color, aroma. The results showed that there was no interaction between treatment duration blanching and temperature blanching on levels ofstarch content, fiber content, water content, ash content and scoring include aroma but there was an interaction between treatmen and long blanching temperature of the color of the scoring. Blanching temperature treatment(70oC, 80oC and 90oC) significantly (α = 0.05) forstarch content, fiber content, water content, ash content and organoleptic properties and scoring include color, aroma. Duration of blanchingtreatment significantly (α = 0.05) forscoring include color. The higher the temperature blanching is used the lower starch content, fiber content, water content and ash contentpruced. Keywords: blanching, purple sweat potato flour, qualiity components. ABSTRAK Penelitian ini bertujuan untuk mengetahui pengaruh suhu dan lama blanching terhadap beberapa komponen mutu tepung ubi jalar ungu (Ipomoea batatas L).Metode penelitian ini menggunakan Rancangan Acak Lengkap (RAL) dengan 2 faktor.Faktor I yaitu suhu blanching (70oC, 80oC, 90oC) dan faktor II yaitu lama blanching (3 menit, 6 menit, 9 menit) dengan 3 kali pengulangan.Data dianalisis menngunakan ANOVA apabila terdapat perbedaan diuji lanjut dengan BNJ 5%.Parameter yang diamati pada penelitian ini adalah sifat kimia meliputi kadar pati, kadar serat, kada air, kadar abu dan sifat organoleptik skoring meliputi warna dan aroma. Hasil penelitian menunjukkan bahwa tidak terdapat interaksi antara perlakuan suhu blanching dan lama blanching terhadap kadar pati, kadar serat, kadar air, kadar abu, aroma skoring tetapi terdapat interaksi antara perlakuan suhu blanching dan lama blanching terhadap warna skoring. Perlakuan suhu blanching (70oC, 80oC dan 90oC) berpengaruh nyata (α=0,05) terhadap kadar pati, kadar serat, kadar air, kadar abu, warna skoring dan aroma. Perlakuan lama blanching berpengaruh nyata (α=0,05) terhadap warna skoring. Semakin tinggi suhu blanching yang digunakan maka semakin rendah kadar pati, kadar serat, kadar air dan kadar abu yang dihasilkan. Kata kunci: blanching, tepung ubi jalar ungu, komponen mutu.

Abstract

The aimed of this research was to determine the effect of different packages on the quality of Pusut Satay during storage in room temperature. The method that used was experimental method with Completely Random Design (CRD) with one factor consist of 4 treatments: laminated paper package (P1), mika box package (P2), Styrofoam package (P3) and LDPE plastic package (P4). Parameter ware analized water content, FFA content, pH, total plate count and yeast total, sensory properties (taste, color, odor and texture ) with hedonic scales. The data were analized using Analysis of Variance on the significant of 5% using CoStat software. Significant result were analizad using Honestly Significant Difference (HSD). Whereas microbiologi’s data was analized using descriptif method. The results showed that the types of package gave non significant effects on water content, FFA content, taste, color, odor and texture during 0 and 24 hours storage. The pH was significant in 0 hour of storage, but that were significant on water content, FFA content, pH, taste, color, odor and texture during 48 hours storage. The pH was significant in 24 and 48 hours of storage. Total plate count of Pusut Satay for all treatments didn’t meet the maximum standard based on National Standarization Agency 7388:2009. Yeast total for all treatments met the maximum standard, it was <1,0x102 CFU/gram during 0 hour, but didn’t meet the maximum requirement for total yeast during 24 and 48 hours. Pusut Satay packaged with LDPE plastic (P4) is recommended as the best treatments based on pH, water content, FFA content, taste, color, odor and texture during storage in room temperature. ABSTRAK Penelitian bertujuan untuk mengetahui pengaruh jenis kemasan terhadap beberapa komponen mutu Sate Pusut selama penyimpanan pada suhu ruang. Metode penelitian yang digunakan adalah metode eksperimental dengan Rancangan Acak Lengkap (RAL) dengan percobaan faktor tunggal yang terdiri dari empat perlakuan yaitu: pengemasan dengan kertas laminasi (P1), kotak mika (P2), kotak styrofoam (P3) dan plastik jenis LDPE (kemasan plastik) (P4). Parameter yang diamati dalam penelitian ini yaitu kadar air, kadar FFA, pH, total mikroba, total jamur, rasa, warna, aroma dan tekstur secara hedonik. Data hasil pengamatan kimia dan organoleptik dianalisis dengan analisis keragaman pada taraf nyata 5% menggunakan software Co-Stat. Jika terjadi perbedaan yang nyata hasil pengamatan kimia dan organoleptik akan dilakukan uji lanjut menggunakan uji Beda Nyata Jujur (BNJ). Hasil pengamatan uji mikrobiologi menggunakan metode deskriptif. Hasil penelitian menunjukkan jenis kemasan memberikan pengaruh yang tidak berbeda nyata terhadap kadar air, kadar FFA, rasa, warna, aroma dan tekstur pada penyimpanan 0 jam dan 24 jam serta kadar pH pada penyimpanan 0 jam, tetapi berbeda nyata terhadap kadar air, kadar FFA, warna, aroma dan tekstur pada penyimpanan 48 jam, pH pada penyimpanan 24 jam dan 48 jam. Total mikroba Sate Pusut semua perlakuan tidak memenuhi syarat batas maksimum cemaran mikroba berdasarkan SNI 7388:2009 selama penyimpanan. Total jamur Sate Pusut semua perlakuan memenuhi syarat batas maksimum cemaran jamur pada produk pangan yaitu <1,0x102 CFU/gram selama penyimpanan 0 jam, tetapi tidak memenuhi syarat batas maksimum cemaran jamur pada produk pangan selama penyimpanan 24 dan 48 jam. Pengemasan dengan plastik LDPE (kemasan plastik) (P4) dapat direkomendasikan sebagai perlakuan yang lebih baik berdasarkan kadar pH, kadar air, kadar FFA, tingkat kesukaan warna, aroma dan tekstur Sate Pusut, pada suhu ruang. Abstract

Yellow pumpkin (Cucurbita moschata) could potentially be used as a source of modified flour material to to reduce the consumption of wheat. One method of modified flour that can be done is the enzymatic hydrolysis process using α-amylase enzyme. This research used α-amylase enzyme of small green pea sprout. Objective of this research is to obtained the best condition incubation periode and addition small green pea sprout. The experimental design of the research employed completely randomized design with two factors, incubation periode with 3 levels of treatment (24, 48, and 72 hours) and addition small green pea sprout (10%, 20%, and 30% (b/b dry flour)). The incubation periode was significantly take affect at level significance 95% to solubility and swelling power but not significantly take affect to water absorbing capacity (WAC), oil absorbing capacity (OAC), and β-caroten content. Addition small green pea sprout was significantly take affect at level significance 95% to solubility and swelling power but not significantly take affect to water absorbing capacity (WAC) and oil absorbing capacity (OAC). In addition, the study confirmed that the incubation periode of 48 hours and small green pea sprout of 30% b/b dry flour were the best condition possible. The results at this condition solubility of 61.45%, swelling power of 31.86%, WAC of 3.04 (g), OAC of 2.62 (g/g), and β-caroten content of 3.08 mg/100 g. Keywords: incubation periode, modified yellow pumpkin flour, small green pea sprout ABSTRAK Labu kuning merupakan salah satu sumber pangan dan sumber pati potensial yang dapat dimanfaatkan sebagai bahan baku tepung termodifikasi untuk mengurangi konsumsi terigu. Salah satu metode modifikasi tepung yang dapat dilakukan adalah proses hidrolisis secara enzimatis dengan menggunakan enzim α-amilase. Tujuan penelitian ini adalah untuk menentukan kondisi terbaik lama inkubasi dan penambahan kecambah kacang hijau melalui proses hidrolisis secara enzimatis. Rancangan penelitian menggunakan Rancangan Acak Lengkap (RAL) dengan dua faktor yaitu lama inkubasi dengan 3 taraf perlakuan yaitu 24, 48, dan 72 jam dan penambahan kecambah kacang hijau 10, 20, dan 30% dari bobot tepung labu kuning yang akan dimodifikasi. Hasil penelitian menunjukkan lama inkubasi berpengaruh nyata pada tingkat kepercayaan 95% terhadap kelarutan, swelling power, dan daya serap minyak namun tidak berpengaruh nyata terhadap daya serap air tepung labu kuning termodifikasi. Penambahan kecambah kacang hijau berpengaruh nyata terhadap kelarutan dan swelling power namun tidak berpengaruh nyata terhadap daya serap air dan daya serap minyak. Kondisi terbaik proses modifikasi pati labu kuning secara enzimatis adalah pada lama inkubasi 48 jam dan penambahan kecambah kacang hijau 30%. Pada kondisi ini dihasilkan kelarutan 61,45%, swelling power 31,86%, daya serap air 3,04 (g/g), daya serap minyak 2,62 (g/g), dan β-karoten 3,08 mg/100 g.

Abstract

This study aimed to determine the chemical and organoleptic sweet yogurt corn by using some types of inoculum. The design used was completely randomized design (CRD) with a single factor, namely the type of inoculum (I), which consists of 4 treatments I1 (addition of Lactobacillus casei 10% ), I2 (addition of Lactobacillus bulgaricus 10%), I3 (addition Bifidobakterium longum 10%) and I4 (addition of Streptococcus termophilus 10%). The treatments was repeated 4 times. The parameters observed pH, total acid, total lactic acid bacteria, appearance, aroma and taste. The data were tested by analysis of variance at 5% significance level using software Co-Stat. Significantly different treatments were tested further using Honestly Significant Difference (HSD) with the same real level. The results showed that the addition of inoculum gave a significantly different effect on the total of acid and flavor of sweet corn yogurt by scoring test, but gave not significantly different effect on pH, appearance, aroma, flavor by hedonic test, appearance and aroma by scoring test. the addition of Streptococcus termophilus inoculum was the best treatment with pH 3.87, total acid 0.031%, total lactic acid bacteria 6,8x108 cfu/ml and can be accepted by panelists with the rather thick of a appearance, slightly flavor of yogurt and slightly sour of taste. Penambahan inokulum Streptococcus termophilus merupakan perlakuan terbaik dengan pH 3,87, total asam 0,031%, total bakteri asam laktat 6,8x108 cfu/mldan dapat diterima oleh panelis dengan penampakan agak kental, agak beraroma khas yogurt dan rasanya agak asam.
